Question by evan_w1: Removing water from red wine from rainy years?
My understanding is that when a growing season is very rainy, red grapes absorb that water and end up producing lighter, often less flavorful wine. Can winemakers simply extract, or allow to evaporate, some of the water from the juice of rainy-year fruit to produce a heartier product?
